I like to watch parts of it every year but I'll be fucked if I understand mouch of it - the graphics on screen (and what they mean), the different jersey classifications, what to look out for etc.

inrng.com/tour/ should get you started Not sure it covers the TV graphics, but the markings at the top represent the important groups on the road: often the breakaway, sometimes the leaders, and then the peloton. The group currently on screen is notated by the yellow accent, and you'll see the time-gaps between groups: maybe 5 minutes from breakaway to the next group, then another measurement like "Gr[oup]. Bardet: 30'"

In any bike race, there's essentially 2 groups. Those who are in contention for the race victory and those who are not.
Each team has 7 riders and when riding in front, you're putting in effort, using up energy and if you keep at it long enough, build up lactic acid which will kill your legs (no more power to push those pedals). If you ride behind someone putting in that effort, you're slipstreaming and using only a fraction of the energy they are. So you preserve energy and your legs stay fresh.
So the goal of each team is to get their best rider (fastest, most explosive sprinter for flat stages, best climber for mountain stages, etc.) to the finish as fresh as possible.
There is typically a breakaway early on. The guys in the breakaway are in contention to win if they can build a good lead and keep it.
The teammates of the ones in the break can take it easy and sit back all day. They can't be expected to do any work trying to reel in the breakaway group. That's their teammate with a chance to win.
The teams that missed the breakaway, have to put in the effort to keep the gap small enough, so their best rider has a shot of getting back in contention for the win. +the teammates of the guys in front, who are slipstreaming all day.
Most of the info on screen is to show you where the different groups are. Group 1 is the breakaway. Group 2 are the next riders chasing them. Etc.
In a multi-stage race, there is an overall classification (gc), which just adds up the time it took to complete each stage. The rider leading the GC gets a special jersey (yellow in the tour, pink in the giro, etc.)
The best young rider in the GC also gets a jersey. White in the tour.
There's a separate scoring for mountains, with point awarded to the first ride to summit a climb (and lesser points for 2nd, 3rd, etc). The leader in that ranking gets the polka dot jersey.
There's a separate scoring for sprints. With points awarded at an intermediate sprint each day + points at each finish. More points on a flat stages, as those often end in a sprint. The leader of the points ranking gets a green jersey.
Apart from the jerseys for the different classifications in the tour, there is also a World Champion jersey, with rainbow stripes. And various national champion jerseys that mostly look like the flag of the country.
Ex world champions or ex national champions often have thin stripes at the end of their sleeves to indicate that.
When you're watching a race, it's usually a case of watching who (which teams) is in the break, who is doing the work behind and whether they're putting in enough effort to bring their best rider back in contention for the win.

Thanks for the above - this was incredibly helpful when I turned the highlights on yesterday.
Even something as simple as knowing the yellow accent shows the group the camera is currently following was really beneficial.

Did you see the press bike causing bauer to crash earlier? Fucking hell. Almost as bad as the car that took a rider out trying to pass a few years back.
Great stage so far. So glad i am off and awaiting more fireworks on the final climb! 😀

A DSM rider hits a stationary bike on the left, which causes the team car to slam the brakes, just as that press motorbike was about to pass it. That was the sporza reporter on the bike and they got taken out of the race, along with the ASO bike who told them to stop there.
